Everyone loves unusual eye-based helms like monacles, goggles or eyepatches. Engineers, of course, have their ensemble of cool-looking goggles, but for those non-engineers out there, the selection of transmoggable eyewear is a little more limited. Some armor types have a few glasses/goggle/patch options, but some - like plate - are pretty hurting.
In fact, there is only ONE plate eyepatch in the game, the Crimson Beholder Eye. It drops from a Burning Crusade level 68 rare spawn, Collidus the Warp-Watcher, who spawns in Shadowmoon Valley.

What's interesting about Collidus is that he only has four drops, each of which is an eyepatch of a different armor type and a random enchantment. They also all look different. So you can head out and kill Collidus (assuming you can find him) and you'll get an eyepatch - it just might not be the right armor type for you to actually use.
Still, they're Bind-on-Equip, so even if it's not the one you want, chances are you can find someone who'd be happy to transmog it. Besides - only plate eyepatch in existence! I MUST HAVE IT.

Amethyst Beholder Eye
A garish combination. Amethyst and silver? Still, a decent choice if the rest of your outfit matches. Coordination is key.
Emerald Beholder Eye
What a marvelous color! The lustrous green goes perfectly with my dazzling eyes. Fabulor approves.
Fiery Beholder Eye
Fiery LIKE MY HEART.
Crimson Beholder Eye
A regal gold and purple combination, suitable for royalty such as myself. Not that you'd know anything about that.
